The intake manifold you mean? On an M20B25? (the stock E30 motor)

The easiest way to do it would be to remove it from the car and thoroughly clean it of all grease (paint will fall off grease or dirt).

Then you will have to prime it with an aluminum primer. A can of this can be found at your local hardware store. Sand the primer with 1000 grit sand paper and prime it again.

Sand it with 1500 grit, then get some enamel paint and spray it. Sand it with 2000 grit.

A second coat (and possibly third coat), followed by sanding will make it look GREAT.

Also: make sure it's off the car and the throttle body/intake ports are masked off. You don't want paint inside that thing.
REMEMBER: Be safe and have fun is Rule Number 1.

No worries. I love painting, I find it really zen and relaxing.

Just MAKE SURE that the majority of your effort goes into the prep work. You can butcher your color coat and it will still look good if you CLEANED, sanded and primed properly.

If I want to paint it an specific (blue or red) color and not aluminum, what brand of paint do you recommend?

The intake is aluminum, so you'll have to get an aluminum primer. Then get on it with regular enamel, or even something made for higher temps, just to be safe.
