What's below the trunk mat?

My e30 came with a full sized spare and bottle cap.

It was missing the tie down and the wing nut so ordered those.

Is there anything else that goes on below the trunk mat/carpet? like a press board piece you see in other cars?

There's a plastic part that goes ontop the stud. Check out realoem.com It's very helpful for a lot of this type of stuff. I'd post up a direct link, but I'm on my phone.
