My understanding is that all the aftermarket E30 carpet sets you see for sale are made by one company, just sold by different retailers. They are sewn, not molded. They do not have insulation and may be designed to install over existing carpet. Most threads I read have a lot of people suggesting a good used carpet set as the best solution.
It's not cheap, but I think you can still get black carpet from BMW.
Hopefully someone with more knowledge will chime in.

I have not heard that they are all made by the same manufacturer but, I have heard over on the E24 forums that most of them are not molded, some have no insulation, install poorly and that most people have been much happier with finding a used one in good condition.
Even if not the same color you could always re-dye it. Unless you are trying to go from black to tan. Going to any dark color like black or blue would be the easiest.
I would also try to look past one that may, at first glance, look too dirty... With plenty of carpet cleaner (lighter fluid is a secret for some stains) and a power washer an old carpet can look pretty nice. Though no amount of cleaner and power washing will get rid of any rips or burn holes.1986 E30 325E
