What would be a "warmed up" temp?

What would be considerd a "warmed up" operating engine temperature? I just want to confirm if my coolant temp sensor is bad by replacing it with a resistor of the right value to see if it will drop my idle. I am just not sure what temp would be considered as "optimal"?

my car idles at 1500 till its right past the Blue mark on the temp gauge then drops to 900,

I don't understand US measurements for engine temps.. so whatever is close to 75-80c.

When I disconnect the coolant temp sensor, idle drops from about 2k to just under 1k... Tried a couple different things, but gave up on it. I really can't stand it anymore.
