    Couple issues..

I searched and couldn't find anything similar to my issues.

Some times my car will take about 6 secs to start, it doesn't matter if the car is warm or cold either. I can hear it turning over when I turn the key but it sounds like it just doesn't want to start. I just replaced all the gaskets, spark plugs (new oem copper ones), new dist. cap/ rotor, fuel filter, coolant temp sensors (gauge and computer), and complete valve job (new seals/ valve grind/ valve adjustment). Any ideas on what it could be?

I've also got a random idle issue too, I say random because some times it acts up some times it doesn't. When I start the car sometimes the idle shoots to 2k and just sits there for a few min and slowly comes down after a few min.(doesn't matter if cold or warm). When my idle isn't at 2k, it usually sits at around 600 which seems low. When it idles at 600 the engine shakes alot and actually vibrates the car, feels like its going to die.

Once the engine has started it runs perfectly fine though. Any help will be appreciated thanks.

Shaky motor while idling could possibly be your motor mounts.

However, I'd check your vacuum leaks first.
Me: "I can't wait to redline my car!"
Mark: "Didn't you just break a rocker arm?"
Me: "Yeah, I don't think I've learned my lesson."
        Mark: "You never will."

I'm going to echo the "check for vacuum leaks" suggestion.

sounds like vacuum leak(s) to me. on a side note, my car idles naturally at about 600, thats a normal m20 idle.

I don't think the words 'normal' 'idle' and 'm20' have ever been said in the same sentence.

This might be a dumb question but how what is a smoke test? and how do I do it? Also what needs to be checked on the relays?

basically a shop hooks a machine up to your intake and it pushes smoke into it, wherever smoke comes out, you have an intake leak.
