My coolant light turns on after driving a couple minutes. The coolant level is good and the car does not overheat. Coolant temp doesn't even reach the half way mark. My only guess is the thermostat stuck open, but not sure. Has anyone ever had this problem?

The coolant light has nothing to do with the thermostat...
It's attached to a level sender on the expansion tank. They fail all the time. -

change your coolant level sensor; the light should go out. common problem as noted above.sigpicComment

remove the sensor and clean it. You do not need to buy a new one. There is normally a lot of buid-up on the electrode preventing the electrons from moving...similar to low coolant level.Comment
