plumb manual gauge to pressure galley and verify actual oil pressure. If it's ok just purchase a new sending unit, if it's not then it's probably time for a rebuild assuming oil is in good shape. Mine did the same thing and then eventually started coming on at idle, requiring me to rebuild it.
20W50 (factory recommendation for most climates) is fine and won't cause the light to be on fro more than about a second. The required test is to temporarily replace the pressure switch with a gauge and see what the oil pressure does on a cold and hot engine and what it does on a hot engine as the rpm increases. The general rule is that you should have at least 10psi per thousand rpm on a hot engine if the engine and oil system is in good condition. You should should also have at least 10psi at idle on a hot engine.
Make sure the right oil is in the engine and use an OE, Mann, or Mobil1 oil filter. I've seen other brands collapse internally.
The car makes it possible, but the driver makes it happen.
