Engine Operating Temperature

At what temp do you start damaging your engine, I have a built M20, The guy that had it built also had a custom radiator built. I feel it runs hot. I want to add a my precise gauge, cant trust the stock gauge.

"normal" is 210-230-ish

over 250 is too hot

i would say normal is closer to 85-90C or 185-195F atleast thats what mine is
