I've seen people mention a G240 and some spec sheets I've found online mention the 90-91 318is came with a g260 which is a more stout tranny. The car will be getting an S50, its at the shop for the swap now.
Which tranny does my 91 318is have?

100% a Getrag 240 transmission. It will work with the S50 but I don't recommend it. The 240 trans is a bit weak.Comment

OK, so if I have a 240 I should plan on having to replace the tranny down the road, and dont do clutch drops lol.
They are installing a medium case 3.73 lsd with the build, should I start shopping for a g260 to drop in, and would it be a direct swap with the 240 paired with the S50?'91 318is, S50 swap, Bilsteing/H&R race, Recaro SRD, etc.

260 bellhousing tilts the shifter by approx 15deg or so, forgot to which side though, this will require you to have a different tranny mount and a bent shifter/selector. Several members here make the mounts. Also, UUC makes a dssr rotated selector.
260 also doesnt mount up to the block perfectly, not every bolt is used, not a problem however. The 240 uses every bolt.
You can also go with a zf.
edit: That spec sheet you linked is definitely wrong.2008 335i - n54b30

ZF trans will require a large guibo driveshaft (do a search, lots work), and being as it is a 1:1 fifth gear (no overdrive) I would reccomend not more than a 3.25 rear diff ratio. other than that, no issues with a ZF swap. They bolt right up, handle more power than a G260, and no parts needed other than factory BMW parts.Comment
