Did you put a new disk, pressure plate and flywheel? What did you use, OEM? Are there any differences in mounting and do you have a factory manual? It might help to see the parts breakdown between the 2.

I know in auto to manual swaps on other model cars I have done, there are certain plates that are on a manual and not on a auto that "space" the trans out the right distance. I have not done an E30 so only trying to give you ideas. I will try to help by looking at my Bentley manual.

I've seen this happen with semi trucks before. I don't know if this is your problem but if the pilot bearing is in bad shape and locking up it will continue to spin the input shaft when you step on the clutch. If you step on the clutch with the car in gear and it still want s to drive itself, then the input shaft is still spinning. Wether it's from the disc hanging up or the pilot bearing seized up, only disassembly will tell.

but if it isn't disengaging fully couldn't the fact that the system isn't bled real well be the issue?

What are the conditions of the master and slave cylinders?

Yes absolutely, but with all the posts advising on bleeding I was looking for other answers. Just a thought.

Sounds like the clutch disk is in backwards.

Get under the car and have someone push the clutch and see if the slave is fully extending?

You cannot see it extend when it is installed. If you unbolt it and hold it in your hand while pushing the piston against the bellhousing, you could have someone step on it while you watch it extend.
