Brake lights stay on after changing brake booster

Ok the above explains it.

Could the adjustment fork on the Booster have anything to do with my problem or is the switch sticking?

It's the fork, you left it too short. The brake light switch has normally closed contacts, the end of the fork needs to contact the plunger on the switch to turn off the brake lights. I made the same mistake with my booster I was lazy though and just bent the bracket for the switch down so it made sufficient contact.

Ok so if i undo the bolt that holds the fork can I turn it without taking the whole booster off? And if so do I turn the fork towards the front of the car. Ok so I need to turn it towards the inside of the car after a reread of your post. LMK

You don't turn the fork. The position of the pedal is adjusted by loosening the lock nut and turning the shaft that sticks out of the booster.
