Will these work to replace my dead batteries in my instrument cluster?

Those will work if you can get leads to attach to them. You will need a professional battery spot welder. A soldering iron is not hot enough. If you use an improper welder, it will literally blow up in your face.

I suggest buying the same part number on the existing batteries with tab leads already installed.
