Does it matter what level dexron ATF you use (manual trans fluid). 91 318is, bmw parts guy said I should use dexron IV or V, basically whichever was the newest.

Either is fine however, I would strongly recommend Redline's MTL rather than Dexron.I'm Not Right in the Head | Random Rants and other Nonsense1st Order Logic Failure: Association fallacy, this type of fallacy can be expressed as (∃x ∈ S : φ(x)) → (∀x ∈ S : φ(x)), meaning "if there exists any x in the set S so that a property φ is true for x, then for all x in S the property φ must be true".

Redline MTL specifically is also known to help with the second gear syncho problems that a lot of e30 trannies have. Even though it costs a bit more, it is definitely worth it in the long run.
Also, some e30 manuals were specified to be filled with ATF. Apparently you can fill them with MTL with no downsides; ATF was just cheaper for the factory.

The reason BMW used ATF was mostly for fuel economy, it's lubrication properties are fine for the syncro rings and pretty much for the bearings and gears in the orange label transmissions.
MTL is basically a synthetic GL4 with an additive package that is just about perfect for the syncros and better protection for the gears and bearings than Dexron.
This is off the path a bit but important none the less:
Never use GL5 in a BMW transmission! the friction modifiers will screw up the syncro rings (too slippery and won't grab the hub).I'm Not Right in the Head | Random Rants and other Nonsense1st Order Logic Failure: Association fallacy, this type of fallacy can be expressed as (∃x ∈ S : φ(x)) → (∀x ∈ S : φ(x)), meaning "if there exists any x in the set S so that a property φ is true for x, then for all x in S the property φ must be true".
