I measured the difference between the throw of the E30 rack and the Z3 rack and this is what I got in inches,
E30 rack: 4 turns, 5 7/8 movement
Z3 rack: (aprox) 2.75 turns, 5 11/16 movement
So the E30 rack moves OVERALL 3/16 more (so 3/32 per side)
I'll gladly give up that 3/32 of movement for the quicker rack. I rarely run into a need for full turning lock but I'm always bitching about the steering response.
And I don't see any problem with making linkage work on my airbag column. It's not that severe, I've seen worse that worked. But yes, some fab'ing skills are needed.
