It was funny when i spec'd out my coil springs the guy was nervous because they could no longer get the wire in the diameter i wanted and they were worried that the extra ounce and 0.1" reduction in travel would put me off. Lol. Just shows the level of precision race teams require on every part that goes on to the car.
I wouldn't be getting them made to spec, I'd be ordering premade, used, circle track parts. There's a goldmine of them on ebay in all sorts of lengths and rates. They average about $15 a spring, and several sellers check and record the rates before sale.

I've purchased several myself. The problem i've found is that each corner of a race car uses a different rate. You have to be patient to find two springs of the same rate. The other hard part is to find a spring that is short enough with low enough spring rates. I highly recommend welding on a perch 2" lower then the factory one in the front. This will allow you to use 7" and 8" springs which will vastly increase your usable selection. Although this will be dictated by your wheel backspacing.

I have some of these laying around. lol

No, you are all good. Bilstein Sports have bump stops inside the strut cartridge. Some that are low cut the internal bump stop in half for more travel.

How does one open up the bilsteins to do this?

I've been trying to find info on diy revalving but can't seem to. Some books suggest that bilsteins are some of the easiest struts to rebuild in your garage, but that was back in the day.
