Fill/Redrill vs Adapters

I disagree. Most of the automotive world runs a 35-50 offset, and that's exactly what you end up at with 20mm adapters.

you end up with stupid offsets with adapters. if it's just for the street a fill/drill by a pro shop is fine. if you want track wheels there's no reason to care about bolt patterns, there's lots of cheap/light/strong track wheels already that fit E30s.

What are your thoughts?

Fill/redrill is cheaper, but I question the safety since it seems most 4x100 redrills start to every so slightly get into the meat of the hub.

It seems you can get good quality adapters for every bolt pattern -> bolt pattern now, but a pair is going to come in around twice as much as a redrill it seems.
