I just got my car aligned, but the wheel is like 2-3 degrees off center. I know it's not a big deal but I'm super OCD about stuff like this so I want to get it fixed. I could just take it back and have him adjust it but I would feel like a big cooter asking for a 2 degree steering wheel change. Can I just take the steering wheel off and center it that way? That should be fine right?

You can take the steering wheel off and straighten it that way, but if they did the alignment and didn't 'test drive' the car and the steering wheel is crooked I would take it backI got a fender roller now! LMK if you need me to roll your fenders or want to rent the tool from me locally.

you should take it back. they were half ass with the alignment. check the the speck sheets too. if you adjust the steering wheel the rack will be off centered. it shouldnt matter if its only a little and you dont have a progressive rack (stock e30) but you paid for a service it should be done right. good luck!

12mm wrench.
If its crooked to the right, crawl under Pass side and loosen the nut that holds the adjustment sleeve and turn the sleeve a 1/2 turn in. tighten up the nut, go to drivers side and repeat but turn it 1/2 a turn out. (If its crooked left do opposite this procedure).
Go for a quick trip around the block and see if that fixed your issue, if not repeat as necessary till you are happy with it.
