      OP, I don't see why you couldn't make a bar like you want, assuming you have the skill/knowledge to do so.

              If this were just for autocross usage, I'd say go harness bars or run them to the rear seatbelt anchors. For track usage? Don't bother and just get a CG-lock. Most chapters will pretty much tell you to pound sand if you show up with harnesses and no proper rollover protection. I believe Schroth makes one type that works with stock seats, but not sure if there's an E30 application.

                      Thanks guys. By track car I meant not daily driver, weekend racer kinda stuff. Ive used harness's before and I really enjoyed the way it held me in. Also going to fixed backs and Im not about to run fixed backs with 3pt's.
