I dunno man, the VR6 vs an e30 even in a Jetta is not an easily won race. The Jetta does have longer gearing but still keeps up pretty good.
When it comes to mods....the VR6 takes to mods like a whore to money...very accomodating. As mentioned also, the sound...the sound of the VR6 is unique.
e30 vs Vr6 to own though... you know the answer

don't underestimate those VR6 cars. In college I had my E30 M3 and my buddy had a '94 GLX 5-speed (94= still made in germany) and our cars were very close.
We both had chips and suspensions and that was pretty much it. I was always faster, but not by much. I would literally just pull a half a car length here and there on the highway. It's been a couple of years, but shit, we literally used to race each other like 4 times a week, let alone what we did on the weekends. Ah, the empty roads of Vermont, they were fun for driving fast

I can beat my friend with a 97' Jetta VR6 off the line but thats about it. Between 2nd and 3rd, he walks on me pretty hard. He has a chip, intake and exhaust. My friend with a 00' jetta walks on me just as strong with just a exhaust and 19in superleggeras. I can beat my other friend with a 92' Corrado VR6 as long as I can get a good launch off the line. Gearing in the Corrado is different from the jettas. The Corrado's mods are chip, intake, exhaust, and other little mods. Overall, my e30 holds up okay against them as long as it's from a dead stop. Otherwise, if it's a rolling race from about 60mph, I get my ass handed to me. BTW, my car has a lightened flywheel, intake, kevlar clutch, 3.73lsd(it's a 4dr) and 215,000 miles on the engine without rebuild. I'll try to race them again this weekend after I get my motor with less miles(90,000) in.
