When people have installed led's in their E36s, the lights will start to dim then cut off when the lights have gone down to about half of their normal brightness. I'm no electrician, but I believe its because leds need more power to stay illuminated, or something...

If you try to dim an LED with a rheostat (as in your car), or a standard TRIAC type dimmer you will burn them out.
You can not think of an LED as a light bulb. It is actually a solid-state device that converts electrical energy to light.
To properly dim a LED you need to find a power controller (LED DRIVER), that uses pulse width modulation. There are a few companies that manufacture small little LED dimmers. http://www.theledlight.com/index.html
