as for the pronunciation, I think schwartz might be more phonetic than shvahrz. The german letter Z has a t sound in it, usually trailing, "zett," but I tend to hear many native speakers lead the z with a soft t. My family is swiss though, so I have zero credibility. I learned ending z's pronounced like "tset" in one syllable.

fyi. Plenty of gentile german folk immigrated, and the ellis island folk mispelled their name to schwartz. Just like everyone does here. Or, just downright anglicized it to "Black". It's an incredibly common surname (so the wikipedia tells me), much more than there are jews in the US.
