well if you keep going, you hit the most famous part of highway 1, then you hit SF, and then there is another 350ish miles of road until highway 1 ends, winding through incredible scenery and small coastal towns until you hit 101, which winds through the redwoods. it depends on how much driving you want to do, but its also likely the weather will be much milder if you stick to the coast (although possibly, likely foggy), and the drive is fucking. amazing.
so yeah, if you want to have a driving trip and you haven't been past monterey before on 1, i'd say just keep going north along the coast until you feel like it. if you want to drive somewhere and then hike or whatever, then i'd say drive to utah (weather may be an issue?) or nevada and do that kind of thing.
