    Who likes fat sausages?

    check out the lunch i put together for my made to order cafeteria project. i did all german food and made everything my self (besides the apple sauce and sour cream that came with the potato pancakes). everything turned out grate and i know there are some other cooks here that would enjoy seeing this stuff. presentation is not anything special but i assure you everything was of the highest quality! ;) we had to do one meat dish and one veg. here they are.



    knock wurst, potato dumpling, and braised cabbage (again all from scratch). poached the dumplings in chicken stock! mmmmm so good.



    potato pancakes (not hash browns!), braised cabbage, apple sace and sour cream.

        I hope you hacked the dumplings to bits with a serrated knife. (the Germans love that!)

          These things can be really tasty. Nothing like a good German, or Hungarian sausage!

                        no i just really like charcuterie. i plan on doing it more in the future. these fuckers came out perfect! did the second grind with some ice and then emulsified. thats the way to do it believe me!

                        i think all of us like a nice fat juicy wiener every so often. :giggle:

                        i had people coming up to my expo all day and asking for "jeremy's sausage" i loved it.

                              Train station bratwurst... that's the stuff boy. I like nürenburger a lot too. Blunt wouldn't like nürnburger. Much to small for his tastes.

                              And Currywurst... that stuff will kill you.

                              Yeah, I like German food. And yeah, they all seem to eat with a fork in one hand and a knife in the other even when eating potatoes.
