This is exactly how I would like to build one of these if I had it. I have a kz550 LTD. It just doesn't lend itself well to this style. I've gone back and forth between bobber and cafe and somewhere in between. I'm probably just going to end up selling it. Would love to own a bike very similar to yours.

1983 shaft drive 650. reliable as hell lol 30 years old and managed 63mpg at 70-75mph for the 900mi round trip

I'm most likely getting a 1997 ninja 600r for my first bike in the next couple days. I made the owner an offer over the phone and he accepted. It's a bit far away so I asked him a bunch of questions, and told him I'll happily pay his asking price ($1300) if he rides it to my house and it is as described. I have a helmet and jacket (that I bought new), and he's willing to include two helmets, gloves, a jacket, an armor suit, a lock, and a battery tender. I'm pretty damn excited, I've wanted a bike pretty much my entire life.
