This is about as close as you will get to an e30 325is in GT4, short of buyin Enthusia with the M3 next week.
Your guinea pig is as follows: The 1991 Nissan Skyline 2.5 GTS, 2.5 litre inline six, 170 hp, 2800 pounds. Pick up a sport suspension, "Road" sim tires, and the race gearbox.
You can't plug the exact specs in, but I've converted and fudged a few things with the numbers on the getrag 260, and this is as close as you will get to a 260 box with the 3.73
Final Drive: 3.512
1st: 3.291
2nd: 2.346
3rd: 1.497
4th: 1.134
5th: 0.940
6th: ignore
Shift it at about 6500-6900 as a "soft" redline, turn off all driver's aids, and you've got a pretty decent sim of an e30.
