    Salsa thread

    I promised to make some badass salsa for the Newyear's party.
    I have my own "satan's sperm" recipie, but wondering how r3vers make their rape sauce.
    Fresh veggies ready to go.

      My few key ingredients are

      roasted jalpenos
      lots of cumin and cilantro
      using chipotles as a base.

        i tend to use tomatillos and serrano peppers as well as some of the above.

        edit: you'll want to roast those, too.

          Ooh, didn't think of roasting the jalapenos. Does that give it a "smokier" taste?
          Directly on the pan or add a tad of olive oil?

            I really like using tomatillos as well. I don't have a recipe that I follow, I've just experimented over the years and settled on the ingredients that I like.

              I usually stick the jalopeno on a skewer and roast it over the burner on my stove. This works for gas or electric. Just keep it rotating and barely above the element.

              ALso when you are done, throw it in a plastic back and let it sit. Once it is completly cooled down the skin will come right off.

                    I love making salsa I usually just walk around the produce department grabbing everything that looks good an then chop an ad them together a little at a time tasting as I go untill I'm satisfied, I like spicy stuff though and usually go overboard and end up making it too hot for other people

                      Romas, cerranos, sweet onion, lime, lots of cilantro

                      sometimes i do cumin and garlic but as long as its all fresh anything is good

                          Cayenne peppers. But those can be hard to find fresh.

                            DON'T TOUCH THE HABANERO WITH YOUR SKIN: Microwave a habanero pepper in a coffee cup of water until it gets soft. Use 2 forks to split the cooked pepper open and remove the seeds. Take a portion of your tomatoes and blend it with the habanero until they are pureed. Add this back into your main batch. I would suggest adding a bit and tasting, as the heat level can get out of control pretty quick.

                            Also ground black pepper is a very nice salsa ingredient that you don't encounter very often. Fresh garlic is pretty much mandatory. Use lots of cilantro.
