Keep in mind this place has been open since 2005/2006 according the the episode and it was "over a million" not millions. That isn't out of the realm of a restaurant that has been open for several years and would require 100-200k upfront investment into capital resources, in addition to constant staff attrition and wasted resources via a horrible cook parading as a chef.
