First, dirty and cluttered are 2 different things. Oil puddles, greasy rags laying around... that is not good, and makes for a bad shop. I 100% agree.
Clutter is different. Clutter means work is happening. There is a spot for everything, but if its out, its being used.
Second, just from personal experience, a shop that restores cars loses money. That's why they are so very hard to find (A good one anyway). Its just not a moneymaking business. Most of them are owned and operated by one person, and maybe a helper. You cannot sell a car for anywhere near what it costs to restore them (In 99% of the cases. There are cars worth millions in restored condition, of course).
If I come across a custom/restore car shop that has a lot of employees, and is spotlessly clean, First thought is they are ripping people off. Charging WAY to much money. I'm sure they do good work...but not THAT good.
When I see a shop that obviously does very quality work, but is just a one man operation (or 2, maybe 3), and his shop is a little cluttered, not perfectly clean, and shiny, I'm MUCH more likely to hire him because I feel like he's doing it for the love of the cars, and what he does. I would rather have someone passionate work on my classic restoration, than someone doing it for the love of the $$$.
This applies only to custom/restore/hot rod shops. If my local general mechanic, or dealers shop looked like shit, I would be going elsewhere. There is a TON of money to be made just replacing parts.... they should be able to afford hiring a highschool kid to clean the shop, at the least.
