I would never give up my D1X but if I had to with something other then nikon I'd go canon.
I think my camera is user friendly but I could just be use to it by now.
Nikon or Canon either way you won't be disappointed.
I usually get my camera gear at B and H photos their prices are good and delivery is fast. You can find some great body and lens packages if you shop around.

The first time I picked up my D80 I found it incredibly easy to navigate. I usually buy at Samy's. They may not have the best deals, but they take care of their customers. When I bought my D80 kit, he gave me a 2gb sd card and a tripod for free, as well as like 35% off my UV filter.

Well I don't think you are losing too much on image quality going with either a canon or a nikon, so at that point the decision is just based on lenses, flashes, price, and most importantly, which handles better for you. If canons "just work" for you, then you should shoot canon, likewise with nikon. That's all personal opinion though. I'm trying to decide if I should pony up for a 50d or get a d90, an extra lens and a flash.
the d40 has no focus motor, and does not compare favorably to the xt
i would go with the slightly older canon rebel xt, because you can use it and accumulate a good collection of glass, then go full frame if you want to (get a 5d)
rebel xt + tamron 17-50 f/2.8 would be a good combo for you i think.
but then again its pretty much a no brainer to go for stuff like this:
