Funny, reminds me of 1987 when I was 17 yrs old. Friend buys a brand new DS M3. Two days later he took a hack saw to the rear panel behind the seat. Why? Because he thought the boom box he had in it would boom louder if it was removed.

From a fabrication standpoint, it's a lot easier without the bulkhead there! But for a basic cage, I'd certainly leave it and only cut out what is needed for the rear 2 bars.
I've built 2 e30's where we cut the package shelf/rear bulkhead out. Both were pretty extensive cages so not much worry about chassis flex with the amount of tubing added to the cars.
