Little update...might be fixed...
The problem is so random that it has been hard to troubleshoot. But I think I may have found it. I drove the car for a long trip last weekend. It started dieing on the freeway at speed(happened twice) but would fire right back up after cycling the key off and on. Then it happened on a back road a few times. When it wouldn't start right back up I pulled over and popped the hood. I dont know what I expected to see, but I ended up tapping on the fuel and main relay because, like others have said, it seems to be something electrical. I reached in the car to turn the key after the tap and it fired right back. I thought it was weird, since the fuel relay was replaced.
Then it happened again, wouldnt start. So I got out and had my wife turn the car over. As it was cranking I tapped the main relay with a closed pocket knife and RIGHT as I tapped, it started.
I replaced the relay on monday, it hasnt happened since. But I cant say its fixed because it only happens on longer drives on hot days. My work commute is >5 miles. I will try to get some miles on it this weekend, but the temps are cooler, so who knows if it will happen.
Would the main relay even cause this symptom? Or would all the electronics shut off? I think I will go crack open the bently after this post. The relay was older and had silicone on the bottom for some reason.

One way that I've found electrical gremlins is to move/twist wires while watching them with a multimeter. It'd be a pain in the ass but you could jumper your sensor plugs and have someone with a multimeter at the ecu connection checking resistance to see if it jumps around. For other wires you might check them at the fuse box. Since the relay was replaced, it could be a poor connection at the plug.
