Every post I have been seeing on Google about obd1 to obd2 conversion says something along the lines of "just Google it there's tons of forums" to "oh so and so already posted that" but I can't seem to find anything about the conversion. I have a 1987 e28 and a 1997 e39 parts car. I've already deleted ews. I have the software to tune out whatever I need to. Any leads would be appreciated

You're not really converting to obd2 if the engine already is obd2. I guess I'm a little confused still. Just don't convert to obd1? Nothing in the car is converted other than adding an obd2 port and rigging up a SES light if you want one.
