I just dealt with this exact problem last weekend on my red Cabrio barn find. It's not from a bad strut as mine is brand new. I also have the single strut set up on both my Cabrio's which I believe is the source of the problem. Enough BS....what I did was make 2 adjustments.
Clearly, the strut was pushing up on the left side which forced the lid to pivot at the latch & lower the right side. I tightened the latch as much as I could and still get the lid closed with modest effort, then I adjusted the passenger side rubber bump stop on the lid. These stops are threaded so clearly are intended to provide some adjustment for lid height. By raising the PS stop, insuring the drivers side was screwed all the way in & tightening the latch you can level out the lid.
I got what was about a 1/2" difference down to something only I would see and I think as the strut loses its "newness" the issue will improve on its own.
Edit..I actually did the bump stop adjustment 1st, then the latch.
