My main concern is rolling at a high speed, giving it too much power and having it step out and then lose it into a ditch after weaving for a bit lol

Learn to drive first. There are a shit ton of people who "know how to drive" that don't know jack. If you can't control your car at its limits then adding power = ditch. I've been riding and racing motorcycles for 20 years so by comparison Hp/Weight my boosted e30 is boring. I'd say a years worth of auto x events should give you a pretty good start.
