I am doing my timing belt and water pump this weekend and wanted to convert to electric fan also.

I will be removing the dead AC system. I was wondering how wide can I go for a pusher fan and how wide of a puller fan can I fit on the car?

Don't buy a shitty auto parts store fan. Keep stock or buy a Spal.

The best (and easiest) solution is a 16" SPAL pusher fan mounted in front of the radiator. You'll need a lower temperature thermo switch to operate the fan. With a standard 80C thermostat a switch that trips at 82-82C is just right. A fan rated at 2000CFM or more will do the job nicely.

I don't get the obsession with Spal. There's tons of aftermarket fans out there. Look in a summit or jegs catalogue.

Can't you also use the stock electric fan on the car with a thermostat/switch change to a lower temp?
