MaxSil 0.50 over pistons, VAC stage 3 head, schrick 288 cam, hone extrude manifold, miller MAF+W.A.R. chip, header back. should i go any bigger than 19lb with my injectors? any P/Ns?

You'll find out for certain when you have the car on the dyno for tuning. The work you've done on the engine will have slightly increased the mass flow and tuning for that combination will be necessary.The car makes it possible, but the driver makes it happen.

Alpina made 200ish hp from standard injectors.............i would use what miller suggest89 E30 325is Lachs Silber - currently M20B31, M20B33 in the works, stroked to the hilt...

its better to have too much fuel to play with than not enough.. I have 19lb injectors and my setup is nowhere near yours, and according to the dyno, they're more than sufficient for now.. I have the Miller chip as well and we started with a preloaded base tune for 19lb injectors and adjusted from there.
I'd say 19lb'ers are a no-brainer for that setup - after spending all that money on engine parts, it would be a crime to not spend a little more to fuel it properly.Make the bastard chase you.
