Last year, I bought an enormous eBay aluminum radiator for my 325 convertible. Problem, they welded in a drain plug bung where the temp sensor is supposed to go. I got a full refund, but they didn't want the bad radiator back. Fast forward to this year's first 110F days in Las Vegas, I mean I have to keep the top up and the A/C blasting to avoid frying like a buffalo wing. Just like electing Bernie, I'd like to install the big rad to get the temperature gauge back to left of center. What functionality will I lose if the temp sensor plug is not connected to anything?

It will redistribute your cooling capabilities. No one person should have that big of a radiator. We need a revolution.
In all seriousness, sounds like there might not be a problem. You want to run cooler? Maybe try a thermostat that opens at a lower temp? If you're currently running the stock setup, its in good working order, and you're not tracking the car... I don't think you should really be overheating, if that's the case, but it sounds like you want the car to run cooler than normal operating temp. That said, the temp sensor controls the aux fan, so if the temperature rises to a certain level, the electric fan in front of the AC condenser kicks on. It has two speeds, low and high. You would obviously lose that functionality if you delete the sensor... but I dont know what else would go wrong, if anything. Hopefully someone else can chime in.
Edit: Also, if you still want to run cool, i can ship you my current thermostat.... its stuck, and the temp barely ever goes over 1/4 warm. ;)

Good information. My thermostat holds the temperature at about 1/3 gauge, or 1/8 inch to the left of center during any reasonable weather. Only when ambient goes over about 110F (4 months here) does the gauge move to the right. My big radiator is about half an inch thicker than a Mishimoto. Obviously, I'm overcompensating for something.

if the temp is above half then a colder T-stat probably wont help because whatever t-stat is in there is probably fully open and if its not its faulty. Are the temps ok when moving ?89 E30 325is Lachs Silber - currently M20B31, M20B33 in the works, stroked to the hilt...

The temp sensor on the left side of the radiator? The radiator sensor wires I think are there to kick on the aux fan if the temps go too high. I think turning on the AC automatically kicks on the aux fan, so it shouldn't be a problem running with out it, since you're running with the AC all the time now anyway.
I've never had mine connected, but I also bought the car without the aux fan and condenser installed.AWD > RWD
