87 325- I'm replacing my subframe, motor mounts (with condor) and oil pan.

Besides a steering rack, what else should I replace while I've got everything apart?

Check all of your bushings, brakes and brake lines

If by steering rack you mean an e36 rack, then yes. If not, you should make that a yes ;)
