its not the hose clamps, theres no coolant flowing through the Thermostat, so I think its stuck closed.

For an e30 m3? It's a one piece tstat and housing, you just drain the coolant and swap the entire thing. If its the plug and sensors in the body, then yes I have had trouble before removing them by hand.
