I had a set of 375/475lb springs. Will Bilstein sports be OK?

The Sport shocks should be fine with those springs.The car makes it possible, but the driver makes it happen.

You might want to look at shortening the front bump stops. I was riding on mine with the ie3/Billie sports setup.

Ditto. I suffered thru years of bone shaking from the bump stops. If the struts are out its 5 min/side.
