Wheels are 16x8 ET10. Rubs slightly over bumps or with people in the car, but that is mainly due to the fact that my rear suspension isn't very stiff. Guards have been rolled and pulled in the rear though to fit a 225 semi under there. If I went back to a 225 standard tyre It probably wouldn't rub at all.Comment

Yes they are technically required. If you go to any serious tire shop, they will have technical data regarding what width of tires can be mounted on what width of rims. Both for handling and safety considerations.
Look at the pictures of the rear wheels in the first post. Don't you think that stretching the sidewalls this way won't affect handling and safety? As for esthetics, I won't comment as it is clearly a non-objective matter.
