Also, if you put it in the perspective of a person who doesn't know how to do serious mechanic work, paying a shop like MM for an M20 build is much cheaper than buying an S5x and paying a shop to swap the car.

maybe, but if you are into e30s for a shop to work on it you should buy a different car. i mean, if you can pay for a shop, you can pay for a newer nicer car. i like e30s because they are simple and i can spend time on it and have something to show for my labor. maybe thats just me.
