I'd say that it really depends. The best thing to do would be to part all the mods and sell it stock, then everyone wins.

Ive parted 5 e30's none where worth saving... Rust and more rust.
If i find a good one i deff try to save it...

I'm on the fence about it. But lean toward parting them out. They are not a rare car by any means. And besides, some cars are worth more parted out, plus it gives others a chance to live on with the parts provided.

It is both stupid and wasteful to part out a perfectly good car. I'm with OP on this one.
