Good luck on this maiden voyage Sir., for I have only ever restored a leather one. The 3 little stripe3 emblem looks old sun faded on mine but, I like it. Adds a little charector, to it.
If it was me, I would just revamp the wood and put it back to work.
Is the emblem under molded plastic? Or is it painted on metal? You could tape off the emblem and fix up the wood bit with some careful sanding and varnish or something...
On the otherhand, I would totally rock it as is... It looks pretty neat with the character, as was previously stated...
2 things make old valuable things keep their value, Condition and originality. I would leave it as is. Often when older valuable stuff is "restored" the value is killed. May not be the case here, but I to like it as is.
got mine free from the junkyard. all you will need is some sand paper to remove the old stain/varnish. remove the emblem as it is only held by adhesive anyway (carefully). get some double sided tape for when you reapply.
I bought MINWAX Polyshades Stain & Polyurethane 1 Step. I bought the color that closest matched the steering wheel. Simply follow the directions for applying but keep in mind the more coats applied the darker the stain will be. Easy.

If you found someone experienced with this sort of thing they could probably restore it a bit without diminishing its value, but you should probably just leave it as is.
