Low oil won't cause the engine to overheat. Once it gets low enough that the pump cavitates and loses oil pressure, the engine will seize before it has a chance to overheat.
It's likely that the oil level dropped enough to lose oil pressure, and she didn't notice the light on. It doesn't take long to finish it off. Best advice if you ever hear any abnormal sound (knocking, rattling) is to stop and investigate. If the oil is so low that it isn't showing on the dipstick, it shouldn't be driven without adding. Doesn't help now though.
I agree that the oil consumption sounds like it was abnormal. That said, the reason that Toyota wouldn't do anything is probably because your particular vehicle wasn't covered by the recall, and your mom didn't want to pay for the cost of an engine replacement. I say replacement, because once you factor in labor, the beat financial option is to replace with a new engine rather than overhaul.
