I recently got my hands on an Italvolanti as well! Brand new wheel never used, the only downside is that it requires a 3 hole hubs which is proving to be difficult to find....

Exactly the issue I have. I was thinking to drill and tap 3 holes in a momo/universal hub. But they only have like 80-83mm diameter face which isn't enough for italvolantis large bolt pattern.
I've also been looking at buying a steering wheel spacer or quick release and drilling that but same problem nothing bigger than like 80mm diameter..
Looking more and more like custom is the only way. I could easily make something if I only had a lathe! :(
