What to do with my eta...

Your thinking of good & tight. His m30 is a torque monster... I dream of a boosted m30 one day.

What does a 323 head do to the 2.7? is it better than the 2.5i head?

A bit smaller ports and valves, but it keeps the compression up. Im not sure if it raises it, ive herd it does. Bigger valves (I valves) and port work can be done though.

Ah, I see. I've read that you can put a M50 crank on the 2.7 to make it a 2.8.
