i believe when a car is marked 1-6/87 it is considered an '87. However when it is marked as 7-12/87 then the car is considered an '88

Yes, your car has the updates. It's easier to tell because it has the bigger taillights and lower rear wheel arches.

You can tell that it's a transition year e30 (only '88 ) because while it has big tails, it still has the goofy aluminum bumpers. Plastics are a direct swap for you.

This depends entirely on when the dealer decides to start pushing "next year's model", which depends entirely on how fast they're going through their stock and what cars they're receiving. In general, anything made in October and later of a particular year is tagged as next year's model.

As it sits right now. Hood latch broke  About to order cable and lock.

Lamin-x coming next week for high beams along with some interior stuff. Rest of bumpers will be sprayed (chrome on top already done.) The whole car will get a new paint job in a month or so. I'll be doing prep myself with some help and and paint will be done at a body shop.

Oh and drove it in the rain today for the first time. Surprisingly super easy to break loose.

So the 88 fits newer lips and parts even though it still has the older bumpers? Why is this?

And what exactly is the valence? The part under the bumper with the fogs? Or whatever is attached under that (which I don't have)?

Thanks for all the help so far.
the valence you see below is an 87 IS.

I got my first e30 when I was 15. And it was bone stock. I still own that car and its like a brother to me. Welcome to the addiction.
