The MAF is all about throttle response and tune-ability. The m30 obviously has pretty heavy internals being 3.5L, and adding the barn-door to your intake setup doesn't help things. By getting rid of it there's a noticeable improvement in power, driveability and midrange punch. It's also more accurate, more sensitive and allows a great range of tuning should you ever decide to make modifications in the future like a cam, big valves, FI, etc.
It's newer, better more advanced technology. Personally I will budget the extra $300 in to any future m30 swap I do, it's not something I would want to leave out.

I used e34 535i downpipes, they are the only ones that fit without modification. I then used a 2"x2 to 2.5" y-pipe and a universal Magnaflow cat with 2.5" single pipe all the way back.
