All updates have been edited into the first post. Plan was to keep this thread relatively clean until stage 2 begins.
Stage 2 is engine build, or swap. Which truly depends on whether I get another daily, and go nuts with this one; or get another E30 for a track build and keep this as a mildly tuned daily. Stage 2 begins end of financial year. Tax return time.

So, my brother and I spent the morning at U Pull It, taking the motor out of a crashed 1985 325e. We pulled the shitty #200 head off while there so it would fit in my boot(trunk) better.
Stage 2 has begun.

I see what you did there.
A turbo set up would be pretty effective with the bike carbs but my power goal is only 200-220 hp at the flywheel. I think that is achievable N/A. Plus, the turbo set up would be adding weight. Now, a supercharged aluminium block M52B28 is something I could work with.
